Pandan Swiss Roll Cake

Siaopo was delighted to share the pandan swiss roll cake with the Kongs. Baby Kristie enjoyed the cake to the fullest potential.

The cake turn out to be quite satisfactory. The cake texture is moderately soft but lack of springy texture when eating the cake on it's own. Slight improvements are to be made to the texture on the next attempt.

Ingredients
80g flour
4 Eggs
80g Castor sugar

50g butter

1 tbsp pandan essence

Fillings
200ml whipping cream

1/2 cup icing sugar

Method

  1. Preheat oven on 200 degree. Line baking tray with greaseproof paper.
  2. Beat eggs in a bowl. Add in sugar and keep beating till fluffy.
  3. Fold in flour, butter, pandan essence till well-mix.
  4. Pour the batter into tray and bake for 12 minutes. Cool it down before removing from paper.
  5. For filling, whip the cream. Add in icing sugar and continue to whip.
  6. Sprinkle some icing sugar on new greaseproof paper.
  7. Put the cake onto the paper. Spread the cream on top and roll it.
  8. Serve chill.

Well, little sis commented that presentation of swiss roll is appalling and horrifying !Ha ha
