Stir Fry Fine Beans With Assorted Meat


Ingredients
1 cup of prawns
1 cup of Chinese mushrooms
1 cup of chicken ( cut small)
1 pack of fine beans
1 tbsp of ikan bilis stock granules
1 tbsp garlic

Method
  1. Heat oil in wok. Fry garlic till fragrant.
  2. Add chicken, mushrooms and prawns and stir fry for 2 minutes.
  3. Add in fine beans and stock granules.
  4. Simmer for another 2-3 minutes.
  5. Remove and serve with rice.

Stir Fry Cucumber With Pork


Ingredients

2 cucumber ( removed skin and sliced diagonally)
1 lb pork loin (sliced)
2 tbsp garlic
1 onion ( sliced)
1 chilli (sliced )

Sauce
2 tbsp soy sauce
1 tbsp chicken stock
1 tbsp oyster sauce
1 tsp sugar

Method
  1. Marinate pork with soy sauce and sugar.
  2. Heat oil in wok.
  3. Add garlic. Fry till fragrant.
  4. Add pork, onion and sauce.
  5. Continue fry for 3-5 minutes.
  6. Serve with warm rice.

Stir Fry Cucumber With Dried Shrimp


One of the Reunion Dinner Dish.
Adapted from Healthy Chinese Cooking by Terry Tan.

Ingredients

2 cucumber ( removed skin and sliced diagonally)

2 tbsp dried shrimp
2 tbsp garlic

2 tbsp oyster sauce

1/2 cup of cornflour water (dried shrimp)

Method

  1. Heat oil in wok.
  2. Add dried shrimp. Stir fry for 1 minute.
  3. Add in garlic.
  4. Add in cucumber and stir fry for 2 minutes.
  5. Add oyster sauce and 2 tbsp water.
  6. Cover for 2 minutes before adding the cornflour mixture.
  7. Serve warm with rice.

Stir Fry Enoki with Prawns


A very simple vegetable dish.


Ingredients
1 cup of prawns
1 packet of Enoki
10 corns
1 stalk spring onions (chopped)
1 tbsp Ikan Bilis stock granules
1 tbsp garlic

Method
  1. Heat oil in wok.Stir fry garlic till fragrant.
  2. Add prawns and corns. Stir fry.
  3. Add in Enoki and stock granules.
  4. Garnish with spring onions.

Bombay Potatoes


This is an easy to cook Indian dish ideally serve with naan bread. A great mid-week recipe for Siaopo.

Ingredients
6 medium potatoes (diced)
1 onion (sliced)
1 packet of Schwartz Bombay Potatoes mix
1 can chopped tomatoes
1/2 cup of water
Lime wedges

Method
  1. Pre-boiled potatoes in water for 10 minutes. Set aside.
  2. Heat oil in wok and fry onions till fragrant.
  3. Add in the spice mix. Cook for 2 minutes.
  4. Add potatoes, water and chopped tomatoes. Mix well.
  5. Simmer for 15 minutes.
  6. Garnish with lime wedges.

Stir-Fry Prawns with Sugar Snap Peas and Baby Corn


Siaopo is back to cooking mode.


Ingredients
1 cup of prawns
1 pack of sugar snap peas
1 pack or baby corn (sliced)
1 tbsp of ikan bilis stock granules
1 tbsp garlic

Method
  1. Heat oil in wok. Fry garlic till fragrant.
  2. Add prawns and stir fry for 2 minutes.
  3. Add in sugar snap peas and baby corn.
  4. Simmer for another 2-3 minutes.
  5. Remove and serve with rice.

Malaysian Sambal Kangkung


Malaysian famous Sambal Kangkung definitely adds a big "kick" to any meal of the day !

Kangkung also known as water convolvulus can be obtained in oriental store in England.

Ingredients
1 packet kangkong
3 cloves garlic
2 tbsp dried shrimp
1/2 tbsp belacan
3 red chillies
2 shallots
1 tbsp sugar

Method
  1. Soak dried shrimp with hot water. keep the water aside.
  2. Blend all ingredients except sugar in a blender.
  3. Heat oil in woke and fry paste for 4 minutes till fragrant.
  4. Add in Kangkung and stir fry for another 3 minutes.
  5. Add some reserved dried shrimp water and sugar.
  6. Stir well and serve immediately.

Green beans with Fu-Yee Pork Mince


One of Siaopo and hubby's favorite vegetable dish. Easy to cook and taste perfectly special !


Ingredients
1 packet green fine beans
250g pork mince
1 tbsp garlic (chopped)
2 tbsp sesame oil
2 tbso cooking oil

Marinate
2 tbsp fermented bean curd
1 tbsp dark soy sauce
1 tbsp soy sauce
2 tbsp fish sauce
2 tbsp cornflour
2 tbsp sesame oil
Dash pepper

Method
  1. Marinate pork mince amd set aside for 10 minutes.
  2. Heat wok with oil. Stir fry garlic till fragrant.
  3. Add in pork mince. Break up the pork mince with ladle.
  4. When pork mince is almost cook, add in fine beans.
  5. Reduce heat to medium and keep frying.
  6. Remove wok from heat. Add in sesame oil.
  7. Serve warm with rice.

Yau Mak Fu-Yee


Stir-fry vegetables with fu-yee is more common in southern Malaysia; as seen more often in their meals. Fu yee is a preserved fermented beancurd in brine.


The more popular way of serving fermented beancurd in Penang is as a seasoning for plain congee or known as Teow Chew porridge.


Yau Mak Fu-Yee
is a well-liked dish in Mum-in-law's household.


Ingredients

1 Rommaine Lettuce (cut)
3 pieces of fu-yee
3 garlic (crushed)
1 tbsp fish sauce
2 tbsp oil


Method

  1. Heat oil in a wok and add in fu-yee.
  2. Fry until fragrant Add in crushed garlic and continue to fry till golden brown.
  3. Add in lettuce. Continue stir fry and add in the fish sauce.
  4. Dish out and serve hot.

Steamed cucumber with turkey mince and prawns


This is one of the dish Siaopo made for a potluck gathering last Saturday. Photos from the enjoyable potluck will be posted in due course.

A simple dish just right for potluck gathering !

Ingredients
2 cucumber (cut into small round piece)
Few prawns (chopped)
1lb turkey mince

Marinate
1 tbsp soy sauce
1 tbsp cornstarch
Dash of peppers and sugar

Sauce
1/2 cup of chicken stock
1 tbsp oyster sauce

1 tbsp soy sauce

1 tbsp cornstarch
1/2 tsp sugar

1/2 tsp sesame oil

Method
  1. Mix the turkey mince and chopped shrimps with the marinade sauce well.
  2. Scoop out the seeds in the middle of the slice round cucumber.
  3. Stuff the cucumber with the mixture. Steam over high heat for 10 minutes.
  4. Put all the sauce ingredients in a saucepan. Bring to boil and stir well.
  5. Pour the sauce onto the cucumber when cucumber is done.
  6. Garnish with chopped spring onions and red chillies. Serve warm with rice.

Stir Fried Aubergine and minced pork


Hubby and Siaopo aren't a big fan of aubergine (also called eggplant or brinjal) but this dish is simply delicious !


Ingredients

10 small aubergine (cut into small pieces)

1 egg
1 tbsp garlic ( chopped)
3 tbsp onions ( chopped)
120 g pork mince
1 tbsp oil Red chillies ( chopped
Spring onions (chopped)

Marinade
1 tsp sesame oil

1 tsp soya sauce

1 tsp cornflour

1 tsp sugar

Dash of peppers

Method

  1. Marinate the pork minced with the marinade ingredients. Set aside for at least 10 minutes.
  2. Cook the aubergine for 4 minutes on boiling water till the aubergine is softened.
  3. Remove the aubergine and rinse them over cold water.
  4. Heat oil in wok and fry the garlic and onions till fragrant.
  5. Add in pork mince and continue stir fry in medium heat.
  6. When the pork mince are well cooked, add in aubergines.
  7. Pour the beaten egg over the aubergines and pork minces.
  8. Stir gently till the egg is well mixed and cooked.
  9. Garnish with chillies and spring onions. Serve with rice.

Spicy Fine Beans with Prawns


Fine Beans are on BOGOF at Sommerfield just around the corner from Siaopo's office this week. BOGOF stands for “Buy One, Get One Free”.

Siaopo, an impulsive shopper will never miss out any good chance when BOGOF spotted in bargain !


Ingredients:
1 packet of Fine Beans
2 tbsp of garlic (chopped)

A handful of dried shrimp (soaked and smashed)
5 fresh red chilies (blend)
1 tsp of toasted Keat Hoe belacan
6 big prawns

2 tbsp Oil


Method:
  1. Heat the wok with oil.
  2. Stir fry chopped garlic and add in dried shrimps
  3. Add in big prawns.
  4. Add the fine beans, blended chilies, toasted belacan and salt.
  5. Stir fry for a few minutes and serve hot.
