Now in his dotage, hubby recalled his two years from his distant youth attending college in Seremban during the early nineties... is 1991 to be exact. There is no shadow of doubt on the time here , yes..hubby has aged !
Hubby continuously shared his exquisite Seremban's food experience with Siaopo. Since Siaopo has never had the pleasure of tasting local Seremban food, Siaopo thought the whole idea of cooking the dish herself sounded enjoyable.
This Seremban Lou Shi Fun is hubby's favorite.
Note: Lou Si Fun aka rat noodle is not available in any Asian grocery stall in Newcastle. It has been substituted with Japanese Udon Noodle. Turkey mince was used as a substitute for pork mince due to its lower fat content.
Ingredients:
40g of Japanese Udon noodle
1 lb Turkey Mince
3 garlic (chopped )
2 tbsp oil
3 tbsp Nampla Sauce (Fish Sauce)
2 tbsp Black/thick soy sauce
3 tbsp Soy sauce
1 tbsp sugar
1/2 tsp salt
1/2 tsp cornflour
1/2 tsp peppers
Chopped spring onions
Method:
- Marinate the turkey mince with salt, pepper, sugar, 1 tbsp soy sauce and cornflour.
- Heat 2 tbsp oil and fry the chopped garlic until fragrant.
- Add in the marinated turkey mince.
- Add in Nampla and dash of pepper. Continue to fry until well-cooked.
- Boil the udon noodles for 2 minutes.
- Drain the water . Put the noodle in a plate and add thick soy sauce and soy sauce.
- Stir the noodle to get an even colour.
- Top the cooked meat onto the noodles and garnish with chopped spring onions.
- Enjoy with chili.

maybe you should cut the udon noodle to smaller pieces to imitate loh shu fun.. :) hehehee.. yum yum... i do not dare to read ur blog empty stomach.. makes me damn hungry eveerytime.. nowadays i read it right after lunch...
This noodle is very delicious indeed. It brings back memory from 18 years ago when I was studying in Seremban. Great stuff.

The old man, WP told me Seremban Lou Shi Fun looks like the normal lai fun wor ? Maybe he brought us all to Holland !! haha
I think you are very creative :) as you know how to find the substitution of raw materials that can't be obtained in UK :)
I like lou shi fun also, but normally i eat the one with soup... :)

I think Seremban Lou Shi fun is different. Is a lai fun and unlike the shorter fun as in Penang - not sure how true but that is WP's theory :P
