Cherry Cake


Is your breakfast boring? Healthy breakfast choice such as oat porridge, weetabix, cornflakes are becoming boring for Siaopo.


A breakfast of change ? Why not try this simple cherry cake. Just less than 15 min of preparation time, it is perfect to serve with morning coffee.

Siaopo baked the cake a night before and packed for breakfast at work the next day.

Ingredients
50g glaced cherries
225g self raising flour
3 tsp vanilla essence
2 tsp of baking powder
200 g butter, melted
180g caster sugar
4 eggs

Method

  1. Grease the cake tin. Pre-heat oven to 160 degree.
  2. Put the sieved flour, eggs, baking powder, sugar, butter and vanilla essence into mixing bowl. Mix well with hand mixer.
  3. Add in cherries to the bowl and gently mix them in.
  4. Spoon the mixture to cake tin.
  5. Bake for 1 -1.5 hour or until cake is golden.

I like butter cake, sometimes I will mix in raisins also. :)
