Siaopo was part of a long and boring meeting; couldn’t help but to let her mind wonder onto more exciting things. Such was her lack of interest of the subject matter being discussed in the meeting.
Dozens of ideas whirled round her mind on her plans for hubby’s birthday. What cheapest gifts she could bestow upon him? What type of cake will be the best choice?
When clock hits five; Siaopo cheerfully grabbed her jacket, shut down her laptop and headed straight to the car park. She then drove away towards her home sweet home to kick start hubby’s birthday preparation!

In Chinese custom, red eggs and birthday cakes are necessary foods when celebrating birthday. Red symbolises happiness and good luck. Siaopo baked an Apple and Apricot Cake and dyed 3 red eggs for hubby's birthday.
Ingredients
250g self raising flour
1 tsp baking powder
225g caster sugar
3 eggs
1/2 tsp vanilla essence
150g butter
100g cooking apples ( peeled and sliced)
50g ready to eat apricot ( cut into small pieces)
25g flaked almonds
Method
- Grease the cake tin. Pre-heat oven to 160 degree.
- Put the flour, eggs, baking powder, sugar, butter and vanilla essence into mixing bowl.
- Mix well with hand mixer.
- Add in apples and apricots to the bowl and gently mix them in.
- Spoon the mixture to cake tin and sprinkle almond flakes
- Bake for 1 hour or until cake is golden.

Sinn Wee, he went for tournament last Sat....he got 27th place and guess what ? total contestant was 27 !! haha
Thank you Sinn Wee. Unfortunately I think it is difficult to fit a game in May because I don't have a weekend in Penang. Last January's game with Vellu was excellent.
