Mexican Chicken Fajita

Fancy a change of cuisine?

Hubby and siaopo swapped usual chinese meal for Mexican Chicken Fajita on Sunday lunch. Mexican-style food is a great cuisine easily prepared at home and can satisfy the Ng's household - at least to some degree.

Ingredients
1 onion - sliced
1 green pepper - sliced
1 red pepper - sliced
350g chicken - cut into small trips
6 closed mushrooms- sliced
1 packet of Spice Mix
4 wraps/tortillas
2 tbsp oil

Method
  1. Heat 1 tbsp oil and fry the sliced onions, red peppers and green peppers for 4-5 minutes till slightly brown. Set aside
  2. Heat another 1 tbsp oil and add in chickens and mushrooms. Stir fry for another 4-5 minutes until chicken is cooked.
  3. Add in spice mix and continue frying. Add the onions and pepper and quickly fry until heated through.
  4. Heat the wraps/tortillas in microwave for 10 seconds.
  5. Spread some salsa onto the warmed wraps/tortillas. Add in the chickens, peppers and mushrooms .
  6. Roll up and enjoy !
